Negativity

I want to talk about a topic that affects a lot of people, and one that has affected my own life a lot recently: negativity. Negativity is that one-sided friendship that always takes, never gives, and even though you know you should let it go, you just can't. Is it because we truly want to be negative?

It's so easy for us to get caught up in feelings of negativity, and I'm no exception. You know what though? I'm tired of it, I truly am. Does negativity do anything for me? Does it enrich my life? More importantly, does it really SOLVE anything? The answer to these questions is 'NO!' Why then is it so hard to be positive?

Positivity is encouraged by many, but not always practiced. Furthermore, I see many people just downright hate people who are positive people. They dismiss positive expression as silly, stupid, or even pointless. Positivity is none of those things. 

The truth is this: there is nothing to be gained from being negative, and it will hold you back in so many ways. Negativity starts out innocently enough, but snowballs until the purveyor eventually becomes bitter, angry, and disillusioned. They begin to blame all the unpleasant things in their lives on other people.

Being positive isn't hard, and there is so much to be gained from it. Ask yourself: is this really worth being negative or angry over? Can I just recognize it for what it is and move on? Can I put a positive spin on this and walk away happy with the knowledge that I can gain something from a negative situation?  The answer to these questions is 'YES!' 

Being positive has so many benefits. You smile more, you laugh more, you are more productive, you are friendlier, and you find that life has meaning. Being positive also means being healthier. Negative people suffer from health problems related to negativity.  Don't believe me?  Read here.

Today, I issue you a challenge.  Every time you feel yourself start to be negative about something, tell yourself it's not worth it and then put a positive spin on it.  If you find yourself surrounded by negative people and negative things, take a step back, put them in a mental time-out, take a deep breath, and remember the positive things in your life.

A Little Road Trip

The other day, I was feeling cooped up like I do about the middle of every week.  I work from home and as a result, I'm home A LOT!  I find it good for my soul to get out to nature during the week to recharge my batteries.  Since I love taking pictures and playing around with photography, it was also a good chance to indulge in one of my hobbies as well.  Enjoy!

Update!

Hello dear readers!  I realized this morning I haven't blogged as much lately, but to be fair, I've been pretty busy.  I've been doing my usual social media self-promotion, and I've nearly completed Chapter 6 of "The Station."  I've also been working from home for the past month, and I have to admit, I really enjoy it!  However, it does not leave as much time for blogging as I'd like...not that I ever blogged much in the first place, but I think you catch my drift.  ;)

The kids are out of school now, and honestly I'm thrilled!  It means I don't have to get anyone up and ready for a few months.  Those of you who are parents know what I'm talking about!  That morning hustle can get really stressful sometimes.  Now, I can relax and linger over my coffee a little longer, or I can start working earlier so I can be done earlier!  Either way, it's a win win.

Next week, look for a new teaser from "The Station"!  I'm really loving the book so far, and I have to admit that I can see my own growth in my writing ability.  I can't wait for your feedback!

Vegan Cookbook

Yep, you read that right:  Vegan Cookbook.  As you know already from the delish vegan recipes I've posted here on this blog, I like cooking vegan food!  And to that end, I decided I wanted to write a simple, quick, and easy cookbook.  It will showcase some regular vegan comfort food that anyone can make, particularly those new to the lifestyle.  It will be a take on old classics, but with a vegan twist!  I'm excited to dive into this project!  I love to write, and I love vegan comfort food, so how can I go wrong?  I'll keep you posted.

In other writing news, I have started Chapter 4 of my book "The Station".  I'm moving right along!

Sky

My folks are visiting from out-of-town this weekend, and yesterday we wandered around doing various things.  We started off by going to a festival that was going on downtown, and, man, the sky looked gorgeous.  I snapped some interesting object-against-the-sky photos, edited them some, and came up with this result.  I call it simply, "Sky".

My New Youtube Channel!

I finally got my Youtube channel up and running!  Yay me!  I spent a good chunk of time making a video trailer for my book "The Melody."  I'd love to say that it all went smoothly and I looked fabulous while doing so, but actually, I cursed a lot!  *laugh*  It took me a long time to make it, but I think I did pretty good for a newbie!  Check out the video trailer:

Chickpea Flour "Eggs"



So this morning I wanted a hearty breakfast, and I wasn't in the mood to press a block of tofu and wait.  Instead, I remembered that vegans often use chickpea flour to make a batter that they then either make omelettes or scrambles out of.  I decided that sounded great, and that I needed to try one.  I did an internet search and found a good recipe for a mix that you can then use whenever you're in the mood.  I did some tweaking of my own to get it how I wanted it, and the results were spectacular!  You can make dinner omelettes out of this as well.  I made mine into a scramble.

Chickpea Scramble

To make the mix:

3 c. chickpea flour (also known as garbanzo bean flour)
5 T. ground flax
5 T. nutritional yeast
3 t. baking powder
2 t. salt-free seasoning
2 t. each garlic powder, onion powder, and pepper
1 t. turmeric powder


Mix well and store in an airtight container, if you use it every day there's no need to store in the fridge, but you can if you prefer.

Shake up mix, and combine one part mix to one part warm water, mix well, and let sit while you prepare your other ingredients.  1/3 c. mix is equal to a small omelette, so double for two, and etc.

Ingredients:

2 T. oil of preference
1 c. chopped mushrooms
1/4 c. each chopped green pepper and onion
1 clove garlic, minced
1 vegan sausage patty, chopped (approx. 1/8-1/4 cup if using already ground variety)
4 T. grated vegan cheese (I like cheddar Daiya)
Chickpea Mix

Instructions:

Heat oil in a frying pan on medium-high heat.  Add chopped veggies and sausage to the pan, and stir fry for a minute or two until onions are translucent.  Add the chickpea mix and spread it out over the veggie/sausage mixture.  Scramble and cook until the chickpea batter is dry, approx 5 minutes depending on your stove.  Turn off the stove, and sprinkle the scramble with the cheese.  Let rest until cheese is melted.  Enjoy!

Notes:

This serves one person, so you'll need to double or triple depending on how many people you have.  I did find that if you add toast, two people could split this recipe, but who would want to?  ;)  When you add the batter to the pan, you can spread it out and instead of scrambling it, you can cook it whole and flip it.  Then you'll have the omelette instead of the scramble.  If you want to make an omelette I would suggest making it the same, except adding the sausage and cheese to the inside of the omelette before folding over.  Then when the cheese is melted inside, it's ready to serve.  You can use any variety of veggies and other ingredients you wish.  Spinach, kale, potatoes, tomatoes, etc. would all be good.  Be creative!

Writing Update: Poetry!

Good morning!  I wanted to talk a little bit this morning about the poetry book I'm working on.  It's called "Deep, Dark, & Lovely", and, no, I did not forget about it!  I know that I had originally talked about it-as well as revealing the cover for it-in conjunction with my book "The Melody" , and had slated it for an April release.

No, it hasn't been released yet, but yes, I am planning to.  The reason for the delay is that it has changed course!  What had originally been planned as a series of unhappy poems has truly evolved into a project that involves three parts: Deep poetry, Dark poetry, and Lovely poetry.  Now, I'm not sure when I will finish or release the project yet, but know this:  when I do, it's gonna be good!  It will be this year though, for sure.

Anyway, thought I'd update you all as I have had a couple of emails about it.  Until then, enjoy, not just today, but everyday.  Make the most of it while you got it.

Mother's Day

I know I've talked before about how I love nothing better than getting out with my kids on what I call "Little Adventures."   Life is short, and I'm not willing to let it pass me by as I sit around in front of the television, my computer, or my phone.  Make the most of the days you have, right?  So, for Mother's Day I wanted to spend it with my kids, on a Little Adventure, and a picnic lunch.

Saturday night we each made our own calzones, and packed our lunch.  The next day we were off!  I took a road less traveled and ended up seeing some fun sites, including an entire little town in Iowa that was Swedish!  They had a Swedish Cultural Center, but as it was Sunday, it was closed.  Oh well, maybe another day.

Renaissance Faire!

Oh my gosh you guys, I have to tell you something:  I LOVE Ren Faires.  Ever since I was a kid and heard about Renaissance Faires I have been in love with them.  Of course, growing up in a very small town in nowhere Midwest, there were no Ren Faires anywhere near me so I just had to imagine what they were like in my mind.  Now that I'm all grown up (sorta), I have the good fortune of living in a city that has an excellent Ren Faire, and even if I can't make one of the big ones within driving distance every year (Kansas City & Minneapolis), I NEVER miss the one right here at home: The Nebraska Renaissance Festival.  Anyway, last weekend was opening weekend and, of course, the kids and I were right there the minute they opened the gates.




Faeries!  We love faeries and all the trinkets and fairy dust they dole out.
